Sun-Dried Tomato and Feta Baked Salmon Recipe

The popular TikTok Baked Feta Pasta, which I’m sure you’ve all tasted by now, served as the inspiration for this simple one-dish dinner! This baked feta salmon is low in carbohydrates, packed with a ton of deliciously fresh and healthful ingredients, and incredibly quick to cook.

Ingredient:

  • 6 ounces MOWI Essential Fresh Atlantic Salmon
  • 1 cup cherry tomatoes, quartered
  • ¼ cup chopped green pepper
  • ¼ cup chopped red onion
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons pitted kalamata olives
  • 1 garlic clove, pressed
  • ¼ teaspoon salt, divided
  • ¼ teaspoon oregano, divided
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon crushed red pepper
  • Fresh basil for garnish

Instruction:

Put the oven on to a temperature of 400 degrees Fahrenheit. A dry pat should be applied to the fish. You should put the following ingredients in a dish that can be baked in the oven: cherry tomatoes, green peppers, red onions, feta cheese, kalamata olives, garlic, and half of the salt and oregano. The dish should be baked in the oven.

After adding the olive oil, make sure that all of the ingredients are thoroughly combined. It is recommended that the salmon be positioned in the middle of the baking dish, and that all of the veggies be piled around it. Place the salmon on top of the crushed red pepper and the leftover oregano after they have been spread out; this will complete the preparation.

On top, if desired, additional olive oil can be drizzled on before serving. If you want the salmon to be cooked all the way through and the tomatoes to be tender, you should bake it for fifteen minutes in an oven that has been preheated. Make sure to include some fresh basil leaves, and if you want to, you may serve it with a side dish of your own.

Before serving, additional olive oil may be drizzled on top, if preferred. To ensure complete cooking of the salmon and tenderness of the tomatoes, preheat the oven for fifteen minutes prior to slicing the recipe. Ensure that it contains fresh basil leaves, and feel free to accompany it with a personal side dish if desired.

Tips:

In this instance, rather than leaving the cherry tomatoes in their whole form, chop them into quarters.Because the amount of time required to prepare this dish is substantially shorter than that required to prepare the original baked feta pasta, the pasta will be able to be cooked all the way through and will be soft.

It would be best to double the recipe. It is possible to make this recipe suitable for a family by increasing the amount of salmon fillets and vegetables that are included in the dish that is used for baking, as well as by using a larger baking dish. This is the perfect dinner for a single person.

It is imperative that the meat of your salmon has reached room temperature before you bake it.Before baking, it is beneficial to take it out of the refrigerator fifteen to thirty minutes before baking it. It will cook more evenly throughout the entire thing as a result of this.

Examine the salmon with the fork to ensure that it is intact. When the salmon has finished cooking, it should be moist and easily peel apart when pressed with a fork on the surface. This requires that the salmon be cooked thoroughly. If you cut into it, it will have a dry appearance or crumble if it has been overcooked. If you cut into it, it will become dry.
