Chinese: The Essence of Asian Cooking is a massive Chinese cooking book that I have owned for a very long time—probably close to ten years. Every now and again when I open it, I become overwhelmed by the amount of materials or the complexity of the meal after looking at the lovely photographs of delectable Chinese foods. However, it was among those intricate recipes that I discovered the one for today: Shredded Chicken with Celery.

 

Shredded Chicken with Celery Recipe Learn like a Pro 

Although I’m not a huge lover of celery and I’ve never been one of those people who could eat it raw, I still decided to give this recipe a try because it seemed so delicious in the photo. Celery has been demonstrated to offer several health benefits, including lowering blood pressure and cholesterol, promoting a healthy immune system due to its high vitamin C content, and containing coumarins, which have been proved to be useful in preventing cancer. Therefore, just that should persuade us to consume more celery.

 

Ingredients

  • 3 chicken breasts (boneless and skinless)
  • 1 teaspoon salt
  • 1 egg white (beaten)
  • 2 teaspoon cornstarch
  • 2 tablespoon peanut oil
  • 3 celery stalks (cut into fine strips)
  • 1 or 2 red chilies (seeded and cut into fine strips)
  • 1 green onion (cut into fine strips)
  • few strips of fresh ginger (cut into fine strips)
  • 1 teaspoon brown sugar
  • 1 tablespoon white wine
  • 1 teaspoon sesame oil

 

Instructions

Shred the chicken thinly with a sharp knife. Combine the cornstarch, egg white, and a dash of salt in a bowl. Add the chicken and stir.

In a hot wok, warm the peanut oil. Stir to separate the shreds after adding the chicken. Once the chicken gets white, remove and drain using a sieve. Stay warm.

 

Stir-fry the celery, chilies, ginger, and green onion for one minute after adding them to the wok. Incorporate the chicken, leftover sugar, salt, and white wine.

After cooking for one minute, mix in the sesame oil.
Warm up the food.

Notes

To get my carrots and celery nice and tiny, I sliced them in half lengthwise, then in half again lengthwise, and then diced them widthwise.

I use my slow cooker to shred the chicken ahead of time. Purchase a package of chicken tenders, which are typically 1 to 1 1/2 pounds in weight and less expensive than breasts, then cook them on High for 4 hours in a slow cooker. It won’t take much work to shred. Or use a chicken that has been rotisseried.
