Pesto Chicken Salad Croissants Recipe

It’s the ideal simple option for lunch, supper, or even a snack. Serve it on top of a bed of greens, as a sandwich or wrap, or enjoy it with crackers.

 

Ingredients

  • 2 cups shredded chicken breast, we use rotisserie chicken
  • 1/3 cup basil pesto
  • 1/4 cup plain Greek yogurt, can use mayonnaise
  • 2 tablespoons sliced green onion
  • Squeeze of fresh lemon juice, optional
  • Kosher salt and black pepper, to taste

The shredded chicken, pesto, Greek yogurt, and green onion should be mixed together in a large basin.

 

Mix thoroughly until everything is incorporated. Depending on your preference, you can add a few drops of lemon juice, and then season it with salt and pepper. Stir once more.

In addition to serving on toast, you may also build a sandwich or lettuce wrap with it, or you can have it with crackers.

 

How to Store

The chicken salad can be kept in the refrigerator for up to four days if it is stored in an airtight container from the beginning. If you notice that the salad has become a little dry, you can simply add a little bit more pesto to it in order to brighten it up.
