Perfect Party-Pleasing Pimento Cheese Recipe
INGREDIENTS :
- 12 ounces sharp white cheddar cheese, freshly grated
- 8 ounces cream cheese, softened
- 4 ounces pimentos, drained
- 1/3 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- ¼ teaspoon smoked paprika
- kosher salt and pepper
- 2 tablespoons chopped fresh chives, for topping
INSTRUCTIONS :
Cheddar cheese should be grated fresh, and around four ounces of it should be left away.
Put the cream cheese, the pimentos that have been drained, the remaining white cheddar, the mayonnaise, the garlic powder, the onion powder, the smoked paprika, and a little bit of salt and pepper into a food processor.
To avoid overwhipping the mixture, pulse and blend it until it is completely incorporated and has a slight whipped texture. I pulse it for about a minute, alternating between on and off, until it seems blended but is not completely smooth.
Once the pimento cheese has been removed from the food processor, it should be placed in a bowl. The leftover white cheddar should be stirred in.
Now that it has reached this stage, you can put it in the refrigerator for a few days. Before serving, sprinkle the fresh chives over top!
