However, I was craving some doughnuts. But I was craving something different, so I looked online and found this recipe for African donuts. I was ecstatic. Don’t get me wrong, most donut recipes are rather similar, but what sets these particular donuts apart, in my opinion, is the addition of coconut milk.

They were delicious, fluffy, light, and not very sweet, so I dusted them with powdered sugar and they looked amazing.
Give it a shot; it’s a delicious weekend treat. There will be a tonne of donuts from this recipe—I didn’t count them all, but I had enough in one big bowl to share with friends.

Ingredients
- 3 cups all purpose flour
- ½ cup coconut milk
- ½ cup sugar
- 1 egg
- 1 teaspoon active dry yeast
- ½ cup warm water
- 1 tablespoon vegetable oil
- ½ teaspoon salt
- 1 teaspoon cardamom
- 1 teaspoon cinnamon
- vegetable oil for frying donuts
Instructions
Stir the yeast and warm water together in a small basin. Wait five minutes for the yeast to dissolve.
Combine the flour, cinnamon, cardamom, and salt in the bowl of your mixer and stir. Add the egg, sugar, coconut milk, vegetable oil, and yeast mixture.
Add more flour if necessary and mix everything together with the hook attachment until the dough is no longer sticking to the side of the bowl and is not overly sticky.
Cover the dough with plastic wrap after placing it in an oiled bowl. The dough will rise slightly if you let it rest for about one hour.
For this, a wok or frying pan with heated oil works great.
To make rolling and cutting the dough simpler, cut it into about six pieces. Roll out each piece of dough until it is about 1 centimetre (less than 1/2 inch) thick. Slice into triangles and drop into boiling oil. Cook both sides through. To absorb the oil, place the donuts on paper towels. Continue with the leftover dough.
Enjoy after sprinkling with powdered sugar.
