Ingredients

- 1/2 teaspoon baking powder
- ¼ tsp baking soda
- 1 tbsp cornstarch
- 1/2 tsp salt
- 1/2 cup unsalted butter room temperature (113g)
- 1 cup granulated sugar (200g)
- 1 egg room temperature
- 1/4 cup sour cream room temperature (60g)
- 1 1/2 tsp vanilla extract (7.5ml)
- ¼ tsp almond extract optional
For the Buttercream
- ½ cup butter room temperature (113g)
- 2 cups powdered sugar (240g)
- 1 tsp pure vanilla extract (5ml)
- 2 tbsp Milk (30mL) plus more if needed
- Food coloring optional
- Sprinkles optional
Instructions
- In a bowl, whisk together the flour, salt, baking soda, baking powder, and cornstarch; set aside.
- Beat in the egg, vanilla, and almond extract (if used) after creaming the butter and sugar until they are frothy. Mix in the sour cream, scraping down the bowl as necessary, until well mixed.
- Mix on low until the dry and wet mixtures are just blended. To mix in any stray flour, scrape down the bowl with your spatula. Roll the dough into a disk, wrap it in plastic wrap, and refrigerate for one hour.
- Set oven temperature to 375F. Roll out the dough to a ¼-inch thickness, then cut the cookies with a 2 1/2–3 inch round cookie cutter. Cut the remaining cookies and reroll the leftovers. Place the cookies on baking pans coated with parchment paper, and bake them at 375°F for 8 to 9 minutes, or until the bottoms of the cookies start to turn color. Place aside to cool fully.
- Cream the butter and add the vanilla and powdered sugar while the cookies bake. While mixing on low, drizzle in the milk. Then, increase the speed to high and beat until smooth. If food coloring is being used, add drops at a time until the desired color is achieved.
