Instructions:

Marinating the Chicken:

  • Mix the chicken pieces with the lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and pepper in a bowl.
  • Add the chicken pieces to the dressing. This will ensure that the chicken is evenly coated.

  • The chicken broth, fresh lemon juice, and lemon zest should be poured in at this point. The mixture should be brought to a simmer.
  • To make a slurry, combine cornflour and water in a small bowl and mix thoroughly.
  • The slurry should be added to the sauce that is cooking in a slow and steady manner while stirring regularly until the sauce reaches the appropriate consistency.
  • Depending on your preference, season the sauce with salt and pepper.

 

Combining Chicken and Sauce:

  • After the chicken pieces have been cooked, place them back into the skillet and give them an even coating of the lemon sauce.
  • You should continue to cook for another two to three minutes so that the flavours may fully penetrate.
  • Take the skillet from the heat and sprinkle some freshly chopped parsley over the chicken that has been marinated in lemon.
