You may believe that your turkey days are over, but you still have enough for the following day and several days!

There are many wonderful ways to breathe new life and flavour into those Thanksgiving leftovers! Making a delicious dish is the easiest way to repurpose leftover turkey or Thanksgiving fare.

Ingredients
Reheating Leftover Turkey
- 3 – 4 servings of leftover roast turkey sliced (about 3- 4 slices per person)
- 2 tbsp unsalted butter
- 1 – 2 cloves garlic minced
- Pinch of salt

- 4 brioche buns or 8 slices of thick bread (of your choice)
- Unsalted butter
- Leftover cranberry sauce
- Leftover turkey gravy
- Shredded lettuce
- 4 fried eggs
Instructions
Reheating leftover Turkey
Turn the oven on to 300°F.
Arrange the sliced roast turkey on a foil-lined plate, and sprinkle with the garlic, butter, and salt. Use the foil to wrap the turkey.
To reheat the turkey, place the foil bundle on a quarter sheet pan and place it in the preheated oven. Approximately fifteen minutes will pass, contingent upon the thickness of the turkey slices. After 15 minutes, check, and if the meat still needs to be heated through, put it back in the oven.
Take out of the oven and turn the oven up to 350°F to toast the bread or buns.
Turkey Sandwich
Place a thin layer of butter on each of the split brioche buns. After placing the buns on a sheet pan with the sliced side facing upward, preheat the oven. The buns should be toasted until the rims are browned and the centre is still soft. Take out of the oven the buns.
To allow each guest to put together their own sandwich, you might serve all the ingredients separately.
When prepared for serving
Spread the top bun with cranberry sauce.
Top with shredded lettuce and arrange 3–4 slices of turkey per person on the bottom bun.
Cover with gravy, then top with an egg and the top bun (dipped in cranberry sauce). Have fun!
NOTES
Any type of bread will do—baked goods, sandwich bread, rolls, wraps, croissants, biscuits—you name it!
Any savoury type of cheese can do, even if it’s just plain cream with a flavour of chives and onions. This would also be a great use for my homemade vegetable cream cheese.
Although baby spring greens are a terrific option, you may also use your favourite lettuce, spinach or rocket.
As high as you desire, pile the turkey high! And cut it into thin or thick slices, based on your taste.
I prefer to season the sandwich with salt, pepper, and balsamic vinegar. adds a little punch to it. You are who you are.
