Move the ricotta mixture to a sieve with a fine mesh that is lined with butter muslin.
After letting the liquid drain for a few minutes, you can add salt if you want to.
If you want harder ricotta, let it drain for a little longer. Put the mixture in a jar that won’t let air in and put it in the fridge.
