INGREDIENTS

  • 3 pounds boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • zest from 1 large lemon
  • 2 tablespoons Worsherire sauce
  • 2 tablespoons minced garlic
  • 2 tablespoons finely chopped flat leaf parsley
  • 2 teaspoons dried thyme
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper

INSTRUCTIONS

To make the marinade, just put all the ingredients in a basin or jar and stir thoroughly.

Place the chicken in a big resealable bag with the marinade in it. Make sure the chicken is thoroughly covered in marinade before sealing the bag and pressing down to release any remaining air.You can alternatively marinade the raw chicken in a glass jar if you would rather not use plastic (I get it—this is the one occasion I do!).

 

Let the chicken sit at room temperature for half an hour while it marinates. Can marinate for up to 1 hour in the refrigerator; however, remove and let the chicken sit at room temperature for 15 to 30 minutes before cooking.

To cook the marinated chicken, discard the marinade and cook it on the grill, in the oven, in the air fryer, or pan-fried until the internal temperature reaches 165 degrees F. The procedure will determine how long the food takes to cook.
