Healthy Greek Orzo Salad Recipe:- A simple recipe for a Mediterranean orzo salad that includes feta cheese, a large quantity of crunchy veggies, fresh herbs, and a Greek dressing with a tangy flavour. This nutritious pasta salad is perfect for your next picnic, or you can even make it ahead of time for dinner. Day after day, it is even more delicious.

 

Healthy Greek Orzo Salad Recipe

Orzo is a type of pasta that is very little and resembles rice. It is one of the pantry basics that I always like to have on hand because it requires very little effort to prepare and can be eaten either hot or cold. To tell you the truth, it is one of my favourite varieties of pasta. It can be toasted with some sun-dried tomatoes for a quick side dish, baked with chicken prepared in the Greek style, or thrown into a soup with lemon when I’m seeking for something that will make me feel more at ease.

 

Ingredients

  • 1 ½ cup dry orzo pasta
  • 1 pint grape or cherry tomatoes, halved
  • 2 green onions, trimmed and chopped (both white and green parts)
  • ½ green bell pepper, seeds removed, chopped
  • 1 cup packed chopped fresh parsley, about 1 ½ ounces
  • ½ cup packed chopped fresh dill, about 0.5 ounces
  • ¼ cup sliced pitted kalamata olives, about 1 ounce
  • 2 teaspoons capers
  • Feta cheese, to your liking

For The Dressing

  • 1 lemon, zested and juiced
  • ¼ cup extra virgin olive oil
  • 1 garlic clove, minced
  • 1 teaspoon oregano

 

Instructions

In accordance with the instructions provided on the package, cook the orzo pasta for approximately eight minutes. Drain and allow to cool for a short while.

The grape tomatoes, green onions, bell peppers, parsley, dill, olives, and capers should be mixed together in a large mixing bowl. The feta cheese should be reserved for the time being. Orzo pasta should be added.
Put together the dressing.

The lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, and a healthy teaspoon of kosher salt and black pepper should be mixed together in a small bowl. Use a whisk to mix the ingredients.

The dressing should be poured over the salad, and then it should be tossed until it is thoroughly incorporated and the orzo pasta is thoroughly coated with the dressing.

 

Place slices of feta cheese, which is creamy, on top. Before serving, cover and place in the refrigerator for a short period of time.

Notes

If you want the orzo salad to have the best flavour, you should mix it while the pasta is still slightly warm. This will allow the pasta to take in as much of the dressing’s flavours as possible. Prepare the dish by covering it and placing it in the refrigerator for a short period of time (up to an hour) before serving.
