Hasselback Sweet Potato Casserole Recipe :-For this simple Hasselback Sweet Potato dish, melt some butter with maple syrup and pecans in it. Easy to make instead of sweet potato dish for Thanksgiving dinner.

 

Hasselback Sweet Potato Casserole Recipe

 

Ingredients :

  • 4 small sweet potatoes (about 6 ounces each)
  • 1/4 cup softened salted butter
  • 1/4 cup light brown sugar
  • 2 tablespoons finely chopped pecans
  • 2 tablespoons maple syrup

 

Instructions :

Since you’re not going to peel them, wash and scrub the sweet potatoes.

Warm the oven up to 400F. Grease the bottom of a baking dish that holds 1 1/2 quarts. First, line the dish with aluminum foil to make it easier to clean up.

Put a sweet potato on a board for cutting. Forks or wooden spoons should be placed on either side of a sweet potato. I like wooden spoons with flat handles better. The knife won’t be able to cut all the way through the potato this way.

Cut the potato into pieces that are 1/8 inch thick. The spoon handles might move around a bit, so you might need to move them around every so often. Put it in the baking dish. Do it again with more potatoes.

Put the nuts, brown sugar, butter, and maple syrup together. A spoon will do if the butter is soft enough, but I used a hand mixer.
Cover the potatoes with half of the butter mixture. Wrap it in foil or a lid, and bake it for 45 minutes.

Take the dish out of the oven and carefully open it up. Cover the potatoes with the last half of the butter mixture. Leave the potatoes uncovered for another 10 to 15 minutes, or until they are soft in the middle.

 

Pour the melted butter mixture in the dish’s bottom over the potatoes right before serving.

 

Notes :

Tip: To quickly soften butter, put it in the microwave for 7 seconds on HIGH right after taking it out of the fridge. Turn the half stick of butter over and heat it for another 7 seconds. This should soften a half stick of butter just right for a 1100 watt microwave.

The chopsticks are too small and move around a lot. When cutting the sweet potatoes, flat-handled wooden spoons stay in place better and keep the knife from going all the way to the other side of the potato.

The recipe can easily be doubled to feed a lot of people.

If you want to air fry Hasselback sweet potatoes, loosely wrap each one in aluminum foil (or put them all in one big foil box) before putting the butter mixture on top the first time.

 

It takes 35 minutes to air fry at 400 degrees. Carefully uncover the potatoes and spread the rest of the butter mixture over them. For another 8 minutes, or until the potatoes are soft in the middle, air fry them.

 

Pour the butter mixture over the bottom of the dish before serving.

You can feed four people with one whole potato or two halves.
