Ground Turkey Curry Soup Recipe
INGREDIENTS
- 1 package of fresh baby spinach, equivalent to 10 ounces
- Either three tablespoons of butter or three teaspoons of margarine
- chopped onions equaling two cups
- There are three tablespoons of all-purpose flour.
- 2 and a quarter tablespoons of curry powder
- Two cans of chicken broth, each containing 14 and a half ounces
- 1 and a half cups of red potatoes, diced and without peeling
- Three-quarters of a cup of carrots, peeled and sliced diagonally
- a quarter cup of chopped celery, two and a half teaspoons of fresh parsley, chopped, and three-
- quarters of a teaspoon of rubbed sage
- 2 cups of half-and-half and 3 cups of cooked turkey that has been chopped
- Salt, to taste, one-half of a teaspoon to taste, one-fourth of a teaspoon of black pepper
DIRECTIONS
- To prepare spinach, remove the stems, wash the leaves thoroughly, and pat them dry. Put aside for later.
- In a Dutch oven of sufficient size, melt butter or margarine over a heat setting of medium. After adding the onion, continue to cook it while tossing it constantly until it becomes soft. When the mixture is smooth, add the flour and curry powder and stir. Cook for three minutes while stirring often. Be sure to whisk the mixture while gradually adding the broth.
- With the potato, carrots, celery, parsley, and sage already added, bring the mixture to a boil over medium-high heat while stirring it regularly. Cook the mixture while stirring it regularly until it
- begins to thicken somewhat. Cover, lower the heat, and let it simmer for fifteen minutes.
Stir in the turkey, spinach, and half and half, then season with salt and pepper. Cover and simmer for ten minutes, stirring the mixture regularly. Adjust the seasonings to your liking before serving.
