Easy Homemade Southern Hush Puppies Recipe

INGREDIENTS :

  • 1 cup cornmeal (138g)
  • ½ cup all-purpose flour, scooped & leveled (71g)
  • 2 Tablespoons sugar (25g)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 large egg, lightly beaten
  • ¾ cup buttermilk (169g)
  • ½ small onion, grated (about ¼ to â…“ cup)
  • Peanut or vegetable oil, for frying

INSTRUCTIONS :

In a big bowl, mix the cornmeal, flour, sugar, baking powder, salt, and cayenne pepper together.

Add the egg and buttermilk to a different bowl and mix them together using a whisk. Add the chopped onion and its juices to the dry ingredients and mix them together until everything is well mixed.

In a large cast iron pot or Dutch oven, heat 2 inches of oil over medium-high heat until a digital thermometer reads 375°F.

When the oil is hot, carefully drop tablespoonfuls of batter into it with two spoons. Use the back of one spoon to push each one in. Do it in groups so the pan doesn’t get too full.

Fry the hush puppies for two to three minutes, turning them over with a wire spatula every so often, until they are golden brown.

Take the hush puppies out of the oil and place them on a wire rack over a baking sheet that has been lined with paper towels.

During frying, keep an eye on the oil temperature and turn the heat up or down as needed to keep it steady.

NOTES :

How to store: With a sealed lid, hush puppies can be kept at room temperature for three to four days or in the fridge for up to a week.

How to freeze: Place cooked hush puppies in a single layer on a baking sheet and freeze for one to two hours. Then, move them to a container that can be sealed again and again to keep them fresh for up to three months.

Reheating: First, if frozen, let it thaw. For the best results, heat it up again in the oven or air fryer. You can also heat up a few at a time in the microwave. Put hush puppies back in the air fryer for 3–4 minutes to make the outsides crispy. They will taste almost as good as when they were first made.

Control the oil temperature. To keep the oil temperature around 365 degrees F, use a good digital monitor. Anywhere from 350°F to 375°F will do. When the temperature is lower, fried food soaks up more oil and takes longer to cook. When the temperature is higher, the outside burns before the inside is done.
