  • 12 medium button mushrooms or cremini mushrooms cleaned with stems removed and discarded
  • Olive oil spray
  • 1 box 8 ounce cream cheese softened
  • 1/2 cup fresh bread crumbs or panko breadcrumbs
  • 2 garlic cloves minced
  • 1/2 tablespoon Worcestershire sauce
  • 1/2 cup finely chopped green onions
  • 1/2 cup freshly grated Parmesan cheese
  • 2-3 tablespoons fresh chopped Italian parsley
  • 1 cup cooked shelled crab finely chopped I use King Crab
  • salt and pepper to taste

Instructions

Set the oven’s temperature to 375.

Arrange the mushrooms, cap side down, on a baking sheet or baking dish after lightly misting them with olive oil spray. Combine the cream cheese, bread crumbs, parmesan, garlic, Worcestershire sauce, green onions, and crab meat in a big bowl. To taste, add salt and pepper for seasoning.

Fill each mushroom with approximately 1 1/2 tablespoons of the cream cheese mixture. Bake for twenty minutes. In the final minute of cooking, turn on the grill to lightly brown the tops. I’ve always found broilers to be unpredictable, so keep an eye on them.

This tip came from one of my readers. Give your mushrooms a quick two to three minute prep. To prevent them from dripping as you bite into them, turn them upside down on a rack and let them drain.

Add a tiny teaspoon of crushed red pepper or cayenne pepper if you like your food to have a little kick.

 

I use large button mushrooms, but the smaller ones would work just as well for a gathering, and the meal would still be delicious. Just keep in mind that the smaller mushrooms will require a few minutes less cooking time.

WHAT IS THE BEST CRAB TO USE?

I enjoy Alaskan King Crab, although that could just be because I’m from the Midwest. The meat is brilliant white and delicious, but it can be a little difficult to remove from the tough, prickly shell. It’s doable with a decent pair of kitchen scissors.

Second place would go to snow crab. Although there are less of them in my area, they are considerably simpler to remove from the shell.

Any anyone from the Northeast would attest that blue crab is the ideal ingredient for these.
