INSTRUCTIONS
Cinnamon Banana Scones
- Put flour in a big bowl and sift it together. Add the brown sugar, cinnamon, nutmeg, baking powder, and baking soda, and mix them in with a whisk.
- ½ cup brown sugar,½ teaspoon salt,½ tablespoon baking powder,¼ teaspoon baking soda,½ teaspoon ground cinnamon, and½ teaspoon ground nutmeg.
- Use a potato masher or a fork to mash the ripe bananas in a small bowl. Cut the cold butter into little cubes. Freeze until it’s very cold.
- ½ cup of unsalted butter and two bananas.
- Put the butter into the bowl with the dry ingredients. You can mash the butter into the flour with your fingers, a pastry cutter, or two forks. It’s going to take some time. It’s time for the butter to be pea-sized.
- In the bowl with the butter and dry ingredients, add the mashed bananas, vanilla, heavy cream, and egg that has been lightly beaten. Fold the wet into the dry with a rubber spoon.
- Change to your hands and knead until everything is mixed. Some bits of dry ingredients will stay at the bottom of the bowl.
- Once everything is mixed, don’t knead it too much.
- ¾ cup heavy cream, 1 large egg, 2 teaspoons Extract of pure vanilla
- Put parchment paper on a cookie sheet. Place the dough on the baking sheet. Use your hands to shape it into a circle that is 7 inches across.
- It needs to be very thick. Make 8 pieces out of the dough. Make sure there is some room between the squares. Look at the picture in the post. Set it aside for 20 minutes.
- Warm the oven up to 375°F. Put heavy cream on top of the scones with a pastry brush. Add sugar on top.
- 1 tablespoon of heavy cream and 1 tablespoon of white sugar
- 25 to 28 minutes in the oven. Put an empty cookie sheet on the bottom rack of the oven to keep the bottom from getting too brown. When the sides are golden brown, the scones are done baking. Before making the sauce, let them cool for 15 minutes on the baking sheet.
