Dunkin Donuts French Cruller Recipe

Ingredients
- 1cuphot water
- 6tablespoonsunsalted butter85 grams, cut into cubes
- 1cupall-purpose flour
- 1tablespoongranulated sugar
- pinchsalt
- 3large eggsroom temperature
- 2egg whitesroom temperature
- vegetable oil for frying
Glaze:
- 1 1/2cuppowdered sugar
- 2-3tablespoonsmilk
Instructions
Cut out 12 parchment paper squares that are roughly the size of your palms. The donuts will be piped onto them using them. Spread some baking spray on them and arrange them on a baking sheet. Put aside.
Blend the powdered sugar and milk thoroughly in a sizable, medium-sized bowl.
The mixture needs to be somewhat thick but still pourable, and it needs to be lump-free and smooth. Add an additional tablespoon of milk to achieve a more translucent glaze. Reduce the milk to get a thicker glazing. Put aside.
Melt the butter and fully integrate the water, granulated sugar, and salt in a medium-sized saucepan over medium heat. Stir frequently.
After the butter has melted completely, swiftly stir in one cup of flour with a wooden spoon over medium heat, making sure to blend the flour thoroughly. Stirring constantly, cook it for two minutes over medium heat. By doing this, the batter will lose excess moisture and become lighter donuts.
After transferring the batter to a stand mixer bowl with a paddle attachment, mix it on medium to high speed for a minute to allow it to cool.
One egg at a time, reduce mixer speed to medium and mix. Add the egg whites and stir until the mixture is glossy and well mixed.
Spoon the doughnut rings onto the prepared paper squares using a large star-shaped pastry bag that has been fitted with it.
Add two to three inches of vegetable oil to a heavy-bottomed sauce pan. When the oil reaches 370 degrees Fahrenheit, lower the heat to medium and begin frying the donuts.
Using a spatula, place a donut in the pan with the parchment paper side facing up. Fry it for a few seconds, then remove the paper with chopsticks and dispose of it.
Fry until golden brown and puffy, about 1 minute on each side for the donuts.
Take out of the pan and set on a cooling rack. Spoon some of the glaze over the donut right away using a spoon.
Continue with the leftover doughnuts.
Allow the glaze to congeal for 30 minutes. Serve!
