INGREDIENTSĀ 

  • 4Ā slicesĀ bacon,Ā cut into Ā½-inch thick pieces
  • 1Ā small onion,Ā diced
  • 1Ā red bell pepper,Ā diced
  • 1Ā large sweet potato,Ā peeled and diced into Ā½-inch cubes (approx 4 cups cubes)
  • 2Ā cupsĀ kale leaves,Ā roughly chopped
  • Ā¼Ā teaspoonĀ cumin
  • Ā¼Ā teaspoonĀ garlic powder
  • Ā¼Ā teaspoonĀ paprika
  • kosher salt and freshly ground black pepper,Ā to taste
  • 4Ā eggs
  • 1Ā green onion,Ā sliced

 

Instructions :

A big saute pan should be heated over medium heat. After adding the bacon, sautƩ it until it is golden brown and crispy. Remove the bacon from the pan and place it on a paper towel or in a small bowl using a slotted spoon. After adding the diced onion and red bell pepper to the pan, sautƩ them for one minute to allow them to become more tender.

Put the sweet potato that has been diced and the spices into the pan. After ten to twelve minutes of cooking, the sweet potato should be stirred a lot. For the final five minutes, cover the pan with a lid to allow the sweet potato to become tender enough to be pierced with a fork. The bacon should be added back into the pan along with the kale, and the mixture should be stirred for an additional one to two minutes, or until the kale has dried out.
