Delicious Ham Salad Recipe
I have prepared this salad for more than 25 years. Nothing can surpass perfection. This dish was really modified by me using a recipe I found in my very first Betty Crocker Cookbook. If you enjoy my Potato Salad, you will agree that Betty Crocker’s vintage recipes are the best! Over the years, I’ve just slightly modified them to suit my tastes and my particular salad recipes! You’ll find yourself returning to this gammon salad recipe time and time again!
Ingredients
- 1 ½ pounds boneless cooked ham, diced (leftover or purchased thick slab, trimmed of fat)
- 1 hard-boiled egg
- 1 stalk celery, roughly chopped
- 2 teaspoons finely chopped onion
- ¾ cup mayonnaise
- 2 teaspoons sweet pickle relish (optional)
- 1 Tablespoon prepared mustard
- salt and pepper (to taste)
- assorted crackers and/or soft rolls (for serving)
Instructions
In a blender or food processor, combine 1 1/2 pounds of diced boneless cooked gammon, 1 hard-boiled egg, 1 stalk celery, roughly chopped and 2 teaspoons of finely chopped onion. Season with a little fresh black pepper.
To mince, pulse (20–25 rapid, brief pulses). For even blending, make sure to scrape down the sides of the food processor.
In a separate large bowl, combine 3/4 cup mayonnaise, 2 teaspoons sweet pickle relish, 1 Tablespoon prepared mustard, and salt and pepper (to taste).
Add the minced ham mixture and stir.
Shut off and rest. I like to let it cool for a few hours. It really improves after it cools down.
Accompany with soft rolls or a variety of crackers.
