Creamy Homemade Tomato Soup-Easiest Recipe Ever

You can make this tomato soup smooth or thick, but we love smooth soups like our Creamy Sweet Potato Soup, our Velvety Carrot Soup, and of course Creamy Potato Soup.

 

Ingredients 

  • 4 Tbsp unsalted butter
  • 2 yellow onions, (3 cups finely chopped)
  • 3 garlic cloves, (1 Tbsp minced)
  • 56 oz crushed tomatoes, (two, 28-oz cans) with their juice, preferably San Marzano
  • 2 cups chicken stock
  • 1/4 cup chopped fresh basil, plus more to serve
  • 1 Tbsp sugar, or added to taste
  • 1/2 tsp black pepper, or to taste
  • 1/2 cup heavy whipping cream, or to taste to combat acidity
  • 1/3 cup parmesan cheese, freshly grated, plus more to serve

 

Instructions

Put a pot that won’t react with food or a metal Dutch oven on medium heat. Put in the butter, then the onion pieces.

Sauté for 10 to 12 minutes, stirring every now and then, until brown and softened. Fry the garlic for one minute until it smells good after adding it.

Chill the food and add chopped basil, chicken stock, sugar (or more sugar if you like it sweet), and black pepper. Mix everything together, then raise the heat, put a lid on top of part of the pot, and let it simmer for 10 minutes.

 

You can leave your soup chunky, but if you like it smoother, you can use an immersion blender to blend it in the pot to the consistency you want, or you can transfer it to a blender in batches and blend until smooth, being careful not to fill the blender too much with hot liquid and pulse a few times to get it going. Then, put the blended soup back in the pot over medium heat.

 

Put back on low heat and add 1/3 cup of newly grated Parmesan cheese and 1/2 cup of heavy cream. Add more salt and pepper to taste, and then turn off the heat.

Put the soup into warm bowls and top with more parmesan cheese and chopped fresh basil.
