This salad can be dressed up a little bit by being placed on a fancy croissant, or it can be dressed down by being placed on plain white bread. Both options are available to you. If, on the other hand, you enjoy this, you ought to store it in your refrigerator during the entire summer.

When the temperature is high during the summer, there is nothing more satisfying than a chicken salad sandwich that is both chilled and creamy. You should also check out anything that is cool and refreshing because that is the only thing that could possibly be better.

HOW TO MAKE CRANBERRY PECAN CHICKEN SALAD

In the beginning, you will need three cups of chicken that has been shredded. I used my pressure cooker to cook chicken breasts that had been frozen, and then I sliced them into appropriate pieces.

The method that worked best for me was the one described above; however, you could also use chicken that you have previously cooked or a rotisserie chicken purchased from the grocery store.

Take a half cup of celery and a handful of almonds and chop them up before adding them to the bowl that contains the chicken.
To the chicken, add a half cup of dried cranberries, and make sure to thoroughly combine them.

After allowing it to chill for at least two hours, this can be considered at its peak. Make sure to give it a thorough stir once it has cooled down. It is possible that additional mayonnaise will be required, depending on the cut of chicken. At this point, you are free to serve it on whatever you choose.

INGREDIENTS

  • 3 cups shredded chicken
  • 1/2 cup dried cranberries
  • 1/2 cup chopped Celery
  • 1/2 cup chopped pecans
  • 1 1/2 cup mayo
  • 2 tablespoons of lemon juice
  • 2 tablesppons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

INSTRUCTIONS

2. In a mixing bowl mix together the mayo, lemon juice , sugar , salt and pepper

What Makes This Cranberry Pecan Chicken Salad Special?

The use of rotisserie chicken or chicken that has been left over from another meal is an excellent option for this salad because it allows for a swift assembly process.

It is a wonderful food to consume during the week, especially after a holiday when you start to feel the need for something that is a little lighter.

This chicken salad goes from being decent to being great when you use a recipe for salad dressing that is very, really good. Make it in a matter of minutes using cupboard and refrigerator basics.
