Ingredients:
For the Tart Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small cubes
- 2-3 tablespoons ice water
For the Caramelized Onions:
- 2 large onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and pepper to taste
For the Filling:
- 1 cup shredded Gruyere cheese (or any other melty cheese like Swiss or Fontina)
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream or Greek yogurt
- 2 large eggs
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- Fresh thyme leaves for garnish (optional)

Instructions:
- Both the all-purpose flour and the salt should be mixed together in a large mixing bowl. Blend the butter into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Add the cold butter cubes and continue to blend until the mixture is smooth.
- The ice water should be added gradually, one tablespoon at a time, while the dough is being gently mixed with a fork until it just beginning to come together. Care should be taken to avoid overworking the dough.
- Form the dough into a disc, cover it with plastic wrap, and place it in the refrigerator for at least half an hour without removing it.
- Butter that has not been salted and olive oil should be heated together in a large skillet over medium-low heat. After about 25 to 30 minutes, add the onions that have been sliced very thinly and continue to cook them while stirring them occasionally until they are tender, golden brown, and caramelised.
- Add salt and pepper to taste, and then season the onions that have been caramelised. Take the pan off the heat and set it aside to cool down a little bit.
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Begin by greasing a tart pan that measures 9 inches in diameter and has a removable bottom.
- Roll out the chilled tart dough into a circle with a diameter of approximately 12 inches on a surface that has been lightly dusted with flour. While being careful, transfer the dough to the tart pan that has been prepared, and then gently press it into the bottom and sides of the pan. Please remove any excess dough.
- Apply a layer of parchment paper to the bottom of the tart crust, and then fill it with pie weights or dried beans. Bake for fifteen minutes in an oven that has been preheated. Take off the parchment paper and the weights, and continue baking for another five minutes, or until the crust has reached the desired consistency and is a light golden colour.
- Put the shredded Gruyere cheese, the grated Parmesan cheese, the sour cream or Greek yoghurt, the eggs, the ground nutmeg, the salt, and the pepper into a mixing bowl. After thoroughly combining, mix.
- Arrange the caramelised onions in an even layer on top of the tart crust that has been pre-baked. The cheese and egg mixture should be poured over the onions, and it should be spread out evenly.
- Take the tart back into the oven and bake it for another 25 to 30 minutes, or until the filling has become firm and the top has turned a golden brown colour.
- After removing the tart from the oven, allow it to cool down for a short while. Depending on your preference, garnish with fresh thyme leaves. Cut into wedges and serve either warm or at room temperature and sliced.
