INGREDIENTS
- 1 & 1/2 cups (180g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt*
- 1 cup (226g) unsalted butter, softened
- 2 cups (400g) packed light brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 cup (150g) chopped unsalted roasted cashews*
INSTRUCTIONS
Turn the oven on to 350°F. Coat an 8-inch baking pan with grease.
Mix the flour, baking powder, and salt using a whisk. Put aside.
Beat the butter and brown sugar together with an electric mixer set to medium speed until smooth. One egg at a time, add them and mix until mixed after each addition. Stir in the vanilla.
Lower the speed of the mixer to low and add the flour mixture gradually, blending until well incorporated. Add the cashews and mix.
