Ingredients
- 1 pound bulk/loose pork breakfast sausage
- 3 cups chopped Yukon Gold potatoes cut into 1/2-inch to 3/4-inch cubes
- ½ cup chopped yellow onion
- 2 cloves garlic minced
- 1 ½ cups fresh baby spinach rough chopped
- kosher salt and black pepper to taste
Instructions
A large non-stick skillet with a heavy bottom or a large cast iron skillet should be heated over medium-high heat.
Place the sausage in the pan and cook it for five to seven minutes, or until it is browned and has some edges that are crispy. During the cooking process, the sausage should be broken up into crumbled bits using a spatula or a wooden spoon.

With the use of a slotted spoon, remove the sausage from the pan, and make sure to leave any rendered fat behind. After adding the potatoes to the pan, continue to boil them for ten minutes, or until they are just beginning to get soft.
In addition to the potatoes, add the onion and continue to simmer for an additional five to seven minutes, or until the onions are soft and the potatoes have a golden brown colour.
One further minute of cooking time is required once the garlic and spinach have been added. You should then return the sausage to the skillet and combine all of the ingredients together. After removing the pan from the heat, season it with salt and pepper according to your preferences.
