Instructions

Use a knife to cut the dates into small pieces. Add the water, maple syrup, orange zest, and orange juice to the dates in a saucepan.

For five minutes, slowly boil the mixture until it gets thick. Take it off the heat and let it cool down until it’s room temperature. After it has cooled, add the chopped walnuts.

Put the butter, white sugar, and brown sugar in a mixer and mix them together. Three to four minutes of mixing on medium speed until the mixture is light and fluffy. Mix in one egg and let it sit for one minute.

Put the flour, salt, and baking soda into the mixer. It will take about one to two minutes of mixing to get rid of any dry streaks. Put the pastry dough in the fridge for at least an hour to cool it down a bit.

On floured parchment paper, roll out the dough into a rectangle that’s about 12 inches by 14 inches.

Put some of the cooked and cool date mix on top of the dough. Be sure to cover all the edges.
Wrap the dough and date mixture in parchment paper and slowly lift it up.

Roll it up like a jelly roll. Place rolled dough in the fridge for 4 to 6 hours (or overnight) until very cold.

Using a sharp knife, cut the chilled dough into ¼-inch pieces and place them on a baking sheet lined with parchment paper. At 375°F, bake for 10 to 12 minutes, or until golden.
