Ingredients

  • 1/2 cup fresh cream ~100 gms
  • 1 cup cooking chocolate* ~125 gms
  • 3/4 tablespoon honey
  • 3/4 tablespoon apple juice / water
  •  60 gms sweet chocolate
  • 65 gms of dark choco chips

Instructions

Chop, weigh, and set away chocolate. I mixed milk chocolate and dark chocolate together. Water and honey should be added.

Chocolate should be melted using the double boiler method. Make sure the chocolate-filled dish doesn’t come into direct contact with the boiling water’s surface.

Here, I made use of my Tupperware steamer. Continue melting until it’s silky and smooth. Allow it to cool for a minimum of twenty minutes.

In a bowl, place the fresh cream and begin beating it with a hand mixer. Beat until soft peaks appear, as indicated. Don’t beat it any more because it will turn into butter at this point.

After the chocolate has completely cooled, stir in the whipped cream. Whisk it thoroughly; it may appear a little runny at first.

But after two to three minutes it will thicken and become spoonable rather than pourable. Pour the mixture into glasses for serving.

Chop up additional chocolate to use as a garnish. I also garnished with some miniature crumbled Oreo cookies that I had.

Let it cool for a minimum of three to four hours. Chocolate Mousse should be served cold.

Tips

Ensure that the bowls are spotless and extremely cold, as well as the beaters if at all feasible. Whipping cream tastes great when it’s cold.
Avoid overbeating the whipping cream to avoid the mixture appearing thick and curdled rather than fluffy.
Avoid over-accelerating the speed and maintain movement in your mixer. That’s low/low-medium, ideal. Have patience.
