Best Banana Blondies Recipe – Step by Step Guide

And to be honest, I was a little taken aback because they appear so innocent! However, there’s an enormous contrast between the extremely sweet caramel icing and the extremely dense banana cake. I tried the recipe twice in a row, and both times I completely failed at exercising self control. I was in a coma for 48 hours, brought on by a banana blondie. Take care as you proceed.

INGREDIENTS

AD
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup all purpose flour
  • 1/2 cup well mashed banana, about 1 to 1 1/2 bananas

CARAMEL ICING

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 2 Tbsp cream or milk

INSTRUCTIONS

Preheat the oven to 350°F. If desired, lightly grease and line a 9-by-9 baking pan with parchment paper so that the blondies can be removed for more neat cutting.

For many minutes, beat the sugar and butter together until they are smooth and fluffy. Mix in the vanilla and egg.

Add the mashed banana, flour, and salt, and stir. Don’t overmix; just stir until everything is thoroughly combined.

Transfer to the pan you have ready.

Bake until the centre is set, 25 to 30 minutes. I use a toothpick to make sure.

Before making the icing, let the cake cool mostly.

Melt the butter in a small pot with the brown sugar and milk or cream, stirring constantly, to produce the caramel frosting. After the liquid reaches a boil, turn off the heat and whisk in the sifted powdered sugar, continuing to whisk until the mixture is entirely smooth. If it seems very thin, you might need to add a small amount extra powdered sugar.

Spread it over the cake right away; it will harden quickly.

Have fun!

FAQs

Why is there no baking powder or baking soda in this recipe?

Blondies are meant to have a dense chewy texture. Rising agents create more of a cakey texture and so blondies and brownies usually don’t include them.

What else can I add to these blondies?

You might try mini chocolate chips, chopped walnuts or pecans, or even some shredded coconut. Next time I bake them I may add some chopped toasted pecans to the frosting for a praline effect!

Can I make gluten free banana blondies?

Yes, a high quality 1:1 gluten free baking mix should work.
