But in my opinion, a salad needs other components in order to be a show-stopper. It is the dressing that is the most important component of a wonderful salad, and our Honey BBQ Dressing is just that. Having a creamy texture, a tangy flavour, and a mild sweetness, it is the ideal compliment to each and every component of this salad.

Ingredients

Dressing:

AD
  •  ¼ cup each: honey and bbq sauce
  •  2 tablespoons each : dijon mustard and apple cider vinegar
  •  ½ cup mayonnaise
  •  1 – 3 teaspoons sriracha (or more to taste)

Chicken:

  •  1 cup buttermilk
  •  1 ½ pound boneless chicken tenders (or breasts)
  •  ¾ cup all-purpose flour (or whole wheat)
  •  1 teaspoon each: garlic powder and smoked paprika
  •  ½ cup grated parmesan cheese
  •  2 eggs, whisked
  •  1 ½ cups panko breadcrumbs
  •  Peanut or canola oil, for frying

Salad:

  •  1 cup cherry tomatoes
  •  ½ cup each : toasted sliced almonds and sliced red onions
  •  10-ounce romaine, chopped into small pieces
  •  2 avocados, sliced

Instructions

For the dressing, combine all of the ingredients in a bowl and whisk them together. Add a generous amount of salt and black pepper to taste. Always keep whisking until you have a dressing that is completely smooth.
MARINATE: In a bowl, combine the buttermilk, half a teaspoon of salt, a large sprinkle of black pepper, and one-third of a cup of the dressing that has been prepared.

Stir the mixture until it is complete. The chicken tenders should be placed in the bowl, and the chicken should be allowed to marinate for a period of thirty minutes. Alternatively, the chicken can be marinated for up to twenty-four hours while it is exposed to the refrigerator.

When you are ready to cook the chicken, remember to prepare it. In a shallow baking dish, combine the flour, garlic powder, and smoked paprika. In another baking dish, combine the panko and the parmesan cheese, and then lay the two dishes next to each other.

A station for dredging is going to be established by us. After taking a chicken tender from the marinade and allowing any excess liquid to drain out, proceed to dredge the strip in the flour mixture, followed by the beaten egg, and then the panko mixture. then, lay the chicken tenders on a baking sheet that has been thoroughly cleaned. Proceed further with the remaining tenders.

Cooking involves adding around one inch to one and a half inches of oil to a cast iron skillet (or any other type of skillet that you typically use for frying things) and allowing the oil to heat up over medium-high heat. After the oil has reached the desired temperature, add a few tenders and allow them to fry for five to nine minutes, turning them over as necessary to ensure that they are cooked all the way through.

Continue to cook until the food is done, then transfer it to a platter that has been lined with paper towels. Cut the tenders into squares or slice them up into smaller pieces. Putting the chicken on top of the greens, cherry tomatoes, sliced onions, avocados, and sliced almonds, and then adding the greens to a large bowl is the first step in the assembly process.

In the event that you do not wish to serve this dish in a family-style format, you may instead simply prepare individual bowls. Pour the dressing over the salad, and serve it as soon as possible!

Notes

Although I have not tested it myself, I have a sneaking suspicion that you could cook these tenders in an air fryer. However, I cannot say for certain that this is the case. If you decide to give it a shot, I would want to hear about your experience with it. In spite of the fact that I have not yet attempted baking the chicken tenders, I am not at all certain how that would turn out!
