Baked Corn And Zucchini Fritters (Oven Or Air Fryer) Recipe
As a result of numerous requests for a baked version of previous dishes, this long-overdue recipe uses your oven or air fryer to produce hot, crispy fritters packed full of vegetables. Although corn and zucchini seem like a traditional summertime combination, frozen food allows these fritters to become a family favorite all year long.
Ingredients
- 2 medium zucchini
- 2 cups fresh, frozen (thawed) or canned (drained) corn kernels
- 1/4 cup chopped scallions, green and white parts
- 1 1/4 cups all-purpose flour
- 2 teaspoons garlic powder
- 1 teaspoon baking powder
- 2 large eggs, lightly beaten
- 1/2 cup heavy cream
- Cooking Spray
Instructions
Using a box grater with a small hole, shred the zucchini and then place it into a kitchen towel. Expel as much moisture as you can.
Grated zucchini, corn kernels, scallions, flour, baking powder, garlic powder, ½ teaspoon salt, and ¼ teaspoon pepper should all be combined in a big basin.
Add the eggs and heavy cream and stir until the batter is thoroughly mixed.
TO COOK THE FRITTERS IN THE OVEN:
Set oven temperature to 400°F. Using parchment paper, line two baking pans.
Form the batter into patties using three tablespoon portions.
Place the mounds on the baking sheets, with a minimum of 2 inches between them.
Coat the fritters in cooking spray and bake for about 15 minutes, or until they are golden brown and beginning to crisp up. Take them out of the oven, sprinkle some salt on them right away, and serve.
TO COOK THE FRITTERS IN AN AIR FRYER:
Set the air fryer’s temperature to 360°F.
Form the batter into patties using three tablespoon amounts, pressing them down a little.
Cooking spray should be used to coat the tops of the fritters after they are arranged in a single layer inside the air fryer basket.
Air-fry the fritters for 10 to 12 minutes, or until they are crispy and golden brown. After taking them out of the air fryer, salt and serve.

The batter will be too thin if you don’t squeeze out as much juice from the zucchini as you can. One tablespoon of extra flour at a time, if necessary, can be added to the mixture until it has a consistency that can be shaped.
