Apple Cider Donut Bundt Cake Recipe
Ingredients
- 1Â c.(2 sticks) plus 2 tablespoons unsalted butter, melted, divided, plus more for pan
- 3Â c.all-purpose flour, spooned and leveled, plus more for pan
- 2Â 1/4Â c.fresh apple cider
- 3/4Â c.unsweetened applesauce
- 2Â tsp.pure vanilla extract
- 2large eggs plus 1 large egg yolk, at room temperature
- 1Â 1/2Â tsp.baking powder
- 1/2Â tsp.baking soda
- 1Â 1/4Â tsp.kosher salt
- 3/4Â tsp.ground nutmeg
- 3/4Â tsp.ground ginger
- 1/8Â tsp.ground allspice
- 1/2Â c.packed light brown sugar
- 1Â 1/4Â c.granulated sugar, divided
- 2Â tsp.ground cinnamon, divided

Directions
- Step 1: Set the rack in the middle of the oven and heat it to 325°F. Butter and flour a Bundt pan that holds 12 cups.
- Step 2: Put apple cider in a medium-sized pot and heat it over medium-high heat. Turn down the heat to a low level and cook for 10 to 15 minutes, or until the cider is reduced to 1 cup and 2 tablespoons. Move one cup to a bowl and set it aside for five minutes to cool down a bit. Add vanilla, whole eggs, egg yolk, and 1 cup of butter and mix them in with a whisk.
- Step 3: In a different bowl, mix the flour, baking soda, baking powder, salt, nutmeg, ginger, allspice, brown sugar, 1 cup of powdered sugar, and 1 1/2 teaspoons of cinnamon. Whisk in the applesauce mixture until it is all mixed together.
- Step 4: Pour the batter into the pan that has been made. This should take 45 to 50 minutes. Bake until a wooden pick stuck in the middle comes out clean. Place the pan on a metal rack and let it cool for 15 minutes. Use a cutting knife or a small offset spatula to go around the cake’s edges and in the middle. Turn cake over onto a metal rack.
- Step 5: In a bowl, mix the last 1/4 cup of sugar and 1/2 teaspoon of cinnamon. In a different bowl, mix the last 2 tablespoons of butter and the last 2 tablespoons of reduced cider. Spread the butter mixture all over the warm cake, and then add cinnamon sugar on top and along the sides. Let it cool down for about two hours before serving.
