Antipasto Salad Easiest Recipe Ever :  Sliced meats, soft cheeses, green and black olives, and vibrant red cherry tomatoes make up an antipasto salad, which is easy to put together and consume with a homemade light lemon olive oil dressing. Everyone enjoys this salad made with Italian ingredients!

Prepare to be “WOWed” with this vibrant, colorful salad from Italy. One of the greatest salads, full of crunchy, sweet, savory, and soft bits. Just combine all the ingredients in a bowl and give it a little stir. Mix the lemon olive oil dressing, then drizzle it over the salad and give it another stir. Ingredients

  • 3 cups romaine chopped
  • 1/2 cup green olives halved
  • 1/2 cup medium black olives
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup mini pepperoni
  • 1/4 cup jarred roasted red peppers chopped
  • 8 ounce Genoa Salami cut into bite sized pieces
  • 1/2 cup mozzarella cheese balls
  • 13 ounce artichoke hearts quartered
  • 8 ounces provolone cheese cut into bite size pieces

Lemon Olive Oil Dressing:

  • 1/4 cup olive oil
  • 2 Tablespoons lemon juice
  • 1 teaspoon Italian seasoning

 

Instructions

Combine the romaine, artichoke hearts, provolone, pepperoni, tomatoes, red peppers, and olives in a big bowl.

To prepare the dressing with lemon olive oil: Whisk together the lemon juice, olive oil, and Italian spice in a small bowl. Drizzle over the solid and discard.
